Eggplant: Nutritional value



 
Little calorie. Displaying 22 calories in 100g, the Eggplant is one of the vegetables the least caloric. It is particularly interesting as part of a slimming  diet since it is rich in pectin, a  filling fiber.
Diuretic. Eggplant contains an interesting amount of potassium which confers slightly diuretic benefits .
 
Anti cholesterol. Studies conducted in the United States and in Austria have shown that Eggplant was able to limit the increase of body fats  and blood cholesterol, increase that usually follows the absorption of fat-rich foods. Eggplant anti-cholesterol benefit may be due to its  pectin content, a special fiber which gels in the intestine, then capturing the cholesterol molecules in the food.
