Ratatouille Niçoise good for Diabetics






Preparation time:15 minutes

Cooking time:30 minutes

Ingredients for Ratatouille Niçoise

1 Eggplant
1 Zucchini
1 yellow pepper
5 tomatoes
2 onions
1 bouquet aromatic of your choice
2 cloves of garlic
Salt
pepper
olive oil

 

Preparation for Ratatouille Niçoise

Thoroughly clean all the vegetables.
Peel the Eggplant and Zucchini: cut into pieces. Drain the peppers of their seeds.
Blanch in boiling water.
Let cool and cut into strips. Proceed in the same way for tomatoes.
Peel and cut the onion coarsely.

In a large oven,  add chopped onions and crushed garlic in a little olive oil. Add the vegetables and then the bouquet of aromatic, salt, pepper.

Let them cook on medium heat until vegetables are tender.

When ratatouille is cooked, remove the bouquet of aromatic. Mix well and simmer a few minutes longer before serving. Ratatouille may also be eaten cold.
